On 13 April Ray Steplin, chef de partie in the Principal Kitchen, represented the House of Commons in the Wing Yip Young Chef of the Year Competition at University College Birmingham. Ray competed against 15 strong finalists from all over the United Kingdom.
Ray was crowned winner of the competition, succeeding with a menu of oxtail and wasabi steamed buns and seared miso black cod. Ray wins a culinary development trip to Hong Kong as well as a commemorative plate and framed certificate.
Many thanks goes to his mentor Nick Wort, Senior Sous Chef, and the PED colleagues who assisted with the crafting of the bespoke bowls used in the competition, showcasing skills and teamwork across the House of Commons Facilities Team.
The Catering Services Directorate provides food and beverage services to the 650 Members of Parliament, their guests, staff, staff of both the Houses of Parliament and visitors. Last year our 67 Chefs and 34 Kitchen Stewards in our kitchen team served nearly 1.4 million food transactions including 150,000 covers in our banquet and private dining facilities alone.
